Decadent chocolate truffles are easy to make and can turn any dinner party into an elegant affair. To contrast the rich chocolate and smooth texture we offer legendary Fleur De Sel as the perfect finishing touch. Sprinkle some on the truffles when they are slick from forming or keep a little on hand to garnish each bite. It is truly a match made in culinary heaven.

Makes 15-20 truffles
8 Ounces Semisweet Chocolate
1/2 Cup Heavy Whipping Cream
1 Tablespoon Butter
2 Teaspoons Liquor, rum or cognac
1/2 Cup Cocoa Powder (We prefer Dutched Cocoa)
Chop the chocolate into small pieces and place in a bowl, set aside
Heat the cream to a boil and pour it over the chocolate. Allow this to sit for 1 or 2 minutes then add the butter and liquor. Whisk the mixture smooth and cover, set aside to cool completely.
When the mixture is ready it will be set firmly enough to scoop out with a melon baller or small ice cream scoop. Scoop out balls of chocolate onto a tray lined tightly with plastic wrap and refrigerate briefly.
Use clean or gloved hands to gently roll the balls into a smoother shape (if desired) and then roll the balls in cocoa powder (also if desired). The truffles are ready to serve and consume after a generous sprinkle of crunchy fleur de sel.
