This rare, fragrant, slightly sweet form of cinnamon is known as "true cinnamon" and is grown in Sri Lanka and the West Indies. It's commonly used in sweet baked goods, custards, ice cream, puddings, whipped cream and hot drinks.Known as “true cinnamon” these delicate quills are  milder and more fragrant than the harsh Cassia variety found in supermarkets.  Only Ceylon sticks are fine enough to be ground in a household grinder or eaten raw.
