Found in most global cuisines, coriander seed has a very different flavor than its leaves with notes of orange, lemon, and sage. Grind seeds and use a thickener for curries and sauces; crack seeds with a mortar and pestle and season chicken or fish dishes; or add to a pepper mill to add an aromatic note to a traditional pepper blend.
