Cranberry Maple Salmon
Filet of Salmon
Fresh squeezed lime juice (for 1 lb fish use 1 lime)
½ oz Cranberry Maple Rub from Spice & Tea Merchants
Honey or Maple Syrup, about 2 teaspoons
1. Squeeze lime juice over fish, drizzle with olive oil, and dust with Cranberry Maple Rub.
2. Cook in a preheated 450 F degree oven for about 12-15 minutes.
3. Remove salmon from oven, and let rest for 10 minutes (you can make a little tent with aluminum foil to sit atop the salmon while it rests). During this period the fish will continue to cook, and the internal temperature will continue to rise. However, it won’t be overdone or dried out as it would be with a longer cook time.
4. Drizzle with honey or maple syrup, garnish with fresh chopped cilantro, and serve!
