Tomato and Basil Tortellini Soup
1/4 Cup fresh basil (and extra for garnish)
1 TSP Garlic Powder
1 TSP Minced Garlic
1/2 TSP Garlic Salt
1/2 White or purple onion
5 Cups Chicken Stock
1 Jar pasta sauce
16 oz three cheese tortellini
1/2 TSP Black Pepper
1 TSP Black Truffle Salt
1 TBSP Olive Oil
3/4 Cup half and half
Parmesan cheese to taste
1/2 Cup skim milk ounce can diced tomatoes
Combine onion, garlic and olive oil in a 6-quart soup pot and simmer over medium heat until onions are translucent.
Add in fresh basil, milk, half and half, chicken stock, pasta sauce and diced tomatoes into mixture. Stir until all ingredients are combined.
Add in the Black Truffle Salt, Pepper and Garlic Salt into mixture.
Simmer mixture for 20 minutes.
Add tortellini into mixture and simmer for another 15-20 minutes.
Serve with fresh basil and parmesan cheese as garnish.
