INGREDIENTS

Makes 4 servings

  • 1 Cup Cracked Wheat Freekeh

  • 3 Tablespoons Apple Cider Vinegar

  • 4 Teaspoons Honey

  • 1/3 Cup Extra Virgin Olive Oil

  • 1/4 Teaspoon Mustard Powder

  • 3/4 Teaspoon Tarragon

  • A Pinch of Sea Salt Flakes

  • A Pinch of Butcher Cut Black Pepper

  • 1 Celery Rib, diced

  • 1/4 Cup Golden Raisins

  • 1/4 Cup Dried Zante Currants

  • 1 Bunch Scallions, green parts only, thinly sliced

  • 1/4 Red Onion, diced

  • 1/2 Cup Natural Sliced Toasted Almonds

  • 1/4 Cup Salt-Free Roasted Sunflower Seeds

DIRECTIONS

  1. Boil 2-1/2 cups water in medium saucepan. Add freekeh, reduce heat to a simmer, and cook until tender, about 20 minutes. Drain freekeh in colander.

  2. Whisk together apple cider vinegar, honey, olive oil, mustard powder and tarragon in medium bowl. Season to taste with salt and pepper.

  3. Mix together celery, golden raisins, currants, scallions, red onion, almonds and sunflower seeds in large bowl. Add dressing and freekeh to large bowl, and toss until combined. Season with more salt, if necessary.
